Turkey == Don't go to Southern Turkey - Ankara, Istabul are a tourist's delight.
Iran = Writ of govt. runs through out Iran, but really depends upon where you want to go. If you go to conservative cities like Qom, you might need to read about them and all the rules you need to follow, in order to not to offend "holy" men there.
Lebanon = Don't go to anywhere near South Lebanon. As long as you're in the region around Beirut and northern Lebanon, you're going to be safe. Even south Lebanon - Hezbollah and other Shi'ite factions are not known for kidnapping foreigners, but do proceed with caution.
Israel = Tel Avil, Haifa = No problem. West Jerusalem is okay. East Jerusalem is fine too, it's just that Israel army harasses the tourists visiting the Palestinian areas.
