However, I am against the mocking of any religion. We must be respectfully critical of each other's beliefs.
If you are concerned with mocking, it means you are not worried about being cast out, ostracized or even physically threatened for your beliefs. Then you are very lucky

We believe that only in certain circumstances, is the death penalty warranted after a fair trial for apostates (I will not go into detail, it's a long topic).
I see you want to deny this luck to those people you want respect from. When you are not in position to extort it by force (and here, you are not), respect can only be earned, not demanded. And you are not exactly going the right way to earn respect…
The only time where attacks/ ridicule maybe warranted is when it is aimed at a group that is hurting people/ animals.
Now that you are mentioning it, I think I should point out that Prophets perfectly fits this category. Including Muhammad.
So I guess that means this is A-okay :

He definitely did hurt some people and some animals. Certainly you believe that harm was justified by whatever reasons, but it is not justified in the eye of everyone, and you didn't mention anything about the harm being justified in your definition.
