What exactly is Islam? Is there such thing as a 'true' Islam? You find Muslims and non-Muslims alike arguing what Islam really says or is about but I only see interpretation.

To give an easy example, You can find individuals who are homosexual or transgender who believe these practices are acceptable in Islam, many people will find this absurd but who they to tell them that they are wrong? Who gave orthodox Muslims a monopoly over religion? The power to tell people what is right and what is not? Perhaps they find the position of some more traditional interpretations absurd.

How do you define exactly what is Islamic and what is not?

I think it's often easier for the more orthodox to make their case because they can simply point at the scripture and say "No look, it says it right here". Although obviously they don't have any more right to call themselves muslim than anyone else. Islam is to a believer as it is to them.

I suppose an exception can be made for ahmadiyahs as they do have a religious figurehead to interpret the texts and say this is what the religion is.
