Man I wish we could take the beautiful things from our culture, the warmth, guest hospitality, the food, the women, the family gatherings, sleep-overs etc and take out all the bad shit :( I would have married me an arab girl instantaneously.

Yeah I totally know what you mean. There are parts of Iraqi culture and way of life that I really miss. I miss the nature of familial and community relationships for one. I miss driving around Baghdad with my friends until the early hours of the morning. All the restaurants, coffee shops and sheesha joints, youth centers, billiard joints would remain open until 3 or 4 am.
I miss the 6 or 7 of us sleeping over at my friend's house smoking sheesha and playing Playstation all night. Good times.

    I also miss this place:

I cant stand aubergine (bayngun) especially desi-style. The vegetable I have been hating since childhood, and probably will for the rest of my life.

Pakistan Zindabad? ya Pakistan sey Zinda bhaag?

I wish they sold the special thai aubergine in the shops - that works wonders on a thai green curry.  In any case how did it taste, and did you make the paste from scratch?

I did indeed. I used pea aubergine (the thai one!). It was nice.

cant see it in the photo - greedy James probably finished it off.

So where did you get the aubergine from?  I hear you have to boil it for hours to soften it up?

Lol no, I can eat to my heart's content and never put weight on. And the aubergines we're kinda dissolved into the curry. They were very soft...

I cut it up into quarters. They simmered for 45 minutes in the sauce. They're more bitter than the standard purple aubergines but they did go soft and yum yum. Tongue

I used a bunch of specialist Asian ingrediants: fresh thai green peppercorns, kaffir lime leaves, galangal, pea aubergine, fresh lemongrass, fish sauce and coconut milk. I also used chestnut mushrooms, fresh basil and coriander, lime zest, shallots, garlic, thai green chilli and cumin.

I'll be honest, I really love Thai food.......except for one dish.....I've never really developed a taste for Thai curry. That looks nice though. Maybe I just haven't tried a decent one.

no eggplant is aubergine.  Thai aubergine is very different, a bit like large hard peas
