Yeah we know science is revisable. So they should go ahead and revise it (using science). Until then, revisable science, even with all its (self imposed) limitations is still the best thing we have, and the best thing we have says very very strongly, that humans share common ancestors with other species, and we don't need a single fossil to pretty damn certain of that.
Their basic issue is that science can't claim absolute mega unquestionable certainty. They are so excited about this that they organise workshops and charge people money to come listen to them lecture about it. It's such a trivial point to make, and the arguments they use to reach it are embarrassingly misunderstood.
Islam isn't even plausible, let alone unquestionable fact. So basically they are barking up the wrong tree, once again.
I don't think they claim that they are actually refuting human evolution. They know that would make them look silly. They are simply saying everything in science can be questioned. There are still open questions for example, and not every issue has universal consensus. They appeal to some mundane and perfectly obvious facts such as this, add some terrible psuedo philosophy, and draw some quite ridiculous conclusions from it.
