I think that the Anjem of late is better characterised by batshit crazy delusion as opposed to hypocrisy.

People change. And young Muslims who party in their college days and grow up to be salafis are a dime a dozen.

Schizophrenia doesn't usually develop until your mid-twenties, and then gets worse with time, and seems to explode into all-out delusion and insanity in your 50s. So it's totally possible that he was a pretty normal, laid-back youth and then developed something like schizophrenia and now he's hyper-religious and crazy. That's what happened to my dad.
