    Tomorrow we will go Italian. My favorite recipe with a mix of halal and haram meat  Wink
    Lamb with egg-lemon sauce (Abacchio broddetato)
    I will buy:
    -about 2 lb of lamb shoulder. I buy this from a local halal butcher, because he has the best lamb meat;
    -2 oz of smoked bacon (Haram!)
    -2 oz of smoked ham (Haram too!)
    Further I need:
    -a small onion;
    -a knife-point of nutmeg;
    -salt and pepper;
    1/4 cup dry white wine;
    3/4 pint of chicken fond;
    2 egg yolks;
    jews from 1/2 lemon;
    1 oz Parmezan cheese;
    1 piece of garlic (to scare off vampires)
    1 spoon of parsley

    In a saucepan I melt the bacon. When there is enough fat I add the ham and the shredded onion and bake at low fire for 5 minutes. Then I turn up the fire and add the lamb (cut to dice),salted and peppered, the nutmeg, and bake till the lamb meat is nice and brown. I add the wine and simmer untill it has nearly vanished. Now I add the chicken fond, cover the pan, and let simmer till the meat is ready, which will take about 45 minutes.
    In a seperate pan I put the egg yolks and add the lemon jews and the cheese. I mix thorougly and I add the warm liquid from the saucepan bit by bit. When I have a nice mix I add the garlic and parsley to the meat in the saucepan, and then I add the mixture of egg, cheese and chicken liquid back into the saucepan bit by bit, while stirring. Then I heat untill the sauce thickens. Do not boil further! Serve with whatever pasta you like.

    Yes, you could use that, but fond isn't salted. And one gerlic toe is sufficient. As you can see, it is added late in the process. I love it!

    elephant garlic is what i would use if I were to use only one toe.. I mean
    one clove  Cheesy

    What Is Elephant Garlic?
    Elephant garlic is probably more closely related to the leek than to the normal stinking rose. The bulbs are very large and a single bulb can somtimes weigh over a pound each. A single clove of elephant garlic can often be as large as a whole bulb of ordinary garlic.

    Lamb and toast for breakfast.

    Pizza which I made from scratch, for second breakfast.

    An omelette for lunch.

    Lamb again for second lunch.

    Chicken and rice for dinner.

    Cornflakes, purely for nostalgia, I think I heard a cornflake gag on QI earlier, may have influenced me.

    Probably some noodles before bed.

    Most people don't cook by recipe, except for special occasions. Cooking by feel and smell is the away to go. Smiley

    Well if you were trying something you'd never made before then yeah, using a recipe would be a good start. That's what recipes are for: to give you the basic idea for something that works. Once you've figured out how to make that work, then you can improvise and you don't need to remember a recipe.

    Oh I tried following a recipie... I just couldn't figuire out how to 'translate' the gas heat system... it said put it on gas heat 6 and my oven dial goes from 0-300. Yeah... I think I under cooked it. grin12

    I have NFI what gas heat 6 is. That's a dumb recipe.

    Of course the other thing recipes are handy for is when you're doing something complex and/or tricky and you can't remember it all, so you need it written down.

    I think it's the older oven system, mine is electrical and I always remember my mum moaning about not having a gas oven with the simpler gas heat system. But yeah, needless to say, the brownies were burnt on the top but pretty much fluid gooey inside.

    I don't use recipies except for baking, err... I've made pasta and rice dishes without a recipie... but I wouldn't try a curry dish without some kind of indication about how much spices and etc to use.

    Lara - you're like my little sister - absolutely useless.

    She's 20, and can't do anything, but is at University studying International Finance.

    I started cooking at 5 years old, coz I was hungry, and determined.

    My nephew is the same as me, they had to lock the kitchen door, as he was found chopping onion for an omelette, when he was 4. haha

    Oz is right about once you get the basics, you can modify it from there.
    I do that with just about everything i make now, (season by reason instead
    of a recipe).  If i havent made something in a long time, I go online and
    review recipes (like what temp and how long to cook for various cuts of meat)
    then say, "oh yeah, okay" and take it from there.

    Thats what taste tests are for while cooking lol.  And Ive been making fried
    rice for about 30 years so its pretty much engrained in my head lol.  Some of
    my recipes take hours, even days to get the ingredients and flavor I want,
    when i really make the killer diller stuff  Tongue
